  • next was a flavorful drink made from cocoa, honey, water, and herbs.

  • then we got to mix flavors of chocolate and different natural spices and herbs, from soy sauce, to garlic, chili pepper, cinnamon salt, coffee and many other flavors. that was fun!
  • This woman was local that is becoming expert in the process. she is the person in-charge of roasting the beans. this is the next step after drying. they use a coffee roaster.

  • beans after roasting, we also got to sample them. at this stage, it is dark chocolate without the sugar.
  • this machine on the right is where the chocolate beans are ground after shelling. they are ground to a smooth creamy texture. then sugar is added so the result is 72% chocolate.
  • after all that chocolate, we had to have more! Look at that anticipation on Melisa's face. Which one to drink first?
  • that evening we went on a "night hike". Kathy missed out, she was not feeling well due to dehydration. the rest of us enjoyed dinner out in the forest preserve, then hiked around with a guide finding cool stuff in the dark. This is a red eyed tree frog.
